Recipe of the Week: Red Thai Prawn Curry

By now you’ll be bored of the traditional Christmas offerings so here’s a tasty alternative. This recipe requires very little effort and takes hardly any time so it’s ideal for entertaining at short notice. It’s so tasty that guests think you’ve been slaving over a hot pan for hours!

The best thing about this is that it’s a really healthy meal so a step in the right direction for the New Year!

You’ll need: A wok or large frying pan

Ingredients

1 x tin of coconut milk
1 x tin of chopped tomatoes
400g cooked prawns (size depends on your preference)
1 x large, white onion
1 x clove garlic
1 x tablespoon of red Thai curry paste (then add to taste to make hotter)
1 x handful of fresh, chopped coriander
1 x teaspoon of fresh, grated ginger
4 x portions of rice noodles (or noodles of your choice)

Optional

Fresh chillies
A generous splash of Thai Fish Sauce

Method

1.       Heat the pan with a splash of oil of your choice.
2.       Dice and fry off the onion.
3.       Add the coconut milk and tinned tomatoes.
4.       Add the garlic, ginger and curry paste.
5.       Add the optional ingredients.
6.       Add the noodles. Some noodles are bunched into portions for you to make it easy.Rice noodles can be soaked in hot water for 2 mins then added to the dish or you could go for straight to wok noodles. Both are simple enough.
7.       Add the prawns and simply warm them through.
8.       Add the coriander and serve in bowls or on plates.
