Lentil Curry
Cooking is breeze with this easy peasy lentil curry recipe. A staple Indian dish, this rich & hearty meal is the perfect dinner treat!
The best thing about this is it is ultra healthy and perfect for those post Christmas diets!

You’ll need: A deep pan, chopping board and knife.
Ingredients
200g red split lentils
1 pint of vegetable stock
1 large onion (finely chopped)
2 garlic cloves (finely chopped)
1 x tin of chopped tomatoes
2 tsp of dried coriander
2 tsp of dried cumin
1 tsp of dried turmeric
½ tsp of dried chilli
Optional
- Salt & Pepper to Taste
- Add chickpeas for extra depth
- For a extra kick add a extra ½ tsp of dried chilli
Method
1. Place lentils into a pan & add vegetable stock. Simmer until soft & drain the water
2. In a separate pan, heat the oil. Cook out the onions & add the garlic and spices. Heat until spices are sizzling.
3. Add the lentil & chopped tomatoes and simmer on a low heat for 15 mins.
4. Plate up and serve with rice, poppadoms or nann bread. Whatever you fancy!
This fabulous recipe is so easy to do, very low in fat and freezable. Perfect to warm you up on those cold days!

Another one I liked…I do a similar recipe with left over frozen veg also, its always a winner, but this I am definately going to try out.
