Chicken Noodle Soup – its’ National Soup Month!

Support National Soup Month and warm your cockles this January!  Home-made soup is a great way to get back into some healthy eating habits when you need to shed those festive pounds. This one’s less than 250 calories a bowl and it’s also filling (unlike most salads!). Plus it’s so simple and quick. Let us warm you up, without feeding you up, with our favourite Chicken noodle soup recipe. Shhh, don’t tell Grandma!

You’ll need: A large saucepan/stock pot

Ingredients

400 – 500g diced chicken
5 x spring onions
50 g of fresh/dried chives
2 chicken stock cubes
200g of rice/egg noodles
1.5 litres of water
1 ½ fresh chillies (or change to taste)
1 large clove of garlic (finely chopped/grated)
1 x tin of sweetcorn (optional)
1 x large, finely chopped pepper (of your choice or a combination of colours)

Optional

  • Mushrooms or vegetables of your choice
  • Feel free to remove the chillies; we like the warming ‘kick’ they give (great for colds too!)

Method

1.       Bring the water to the boil and add the stock and garlic.
2.       De-seed the chillies and finely chop, along with the spring onions and chives; before adding to the pan.
3.       Whilst still boiling add the diced chicken and leave for 1min before turning the pan down to simmer
4.       Add the sweetcorn & pepper (or veg of your choice) and simmer on a low heat for 15 mins.
5.       The secret trick to thickening your soup is to remove ¼ of it and blend, than add this back into the pan and stir.
6.       Add the noodles and simmer for another 3 minutes
7.       ‘Bowl up’ to serve.

The great thing about this is you can put this in tubs and freeze for a rainy day (literally!).
