Guilt Free Sticky Toffee Pudding

January is almost certainly the month of healthy eating. Whilst we’ve tried oh so hard to stick to a healthy regime, who says you can’t have a treat once in a while?  Treat yourself to this Sticky Toffee Pudding! It’s a perfect after dinner treat and it’s made even better by the fact its low in fat & calories.  Not only that but it tastes delicious! We say pass the spoons and enjoy this scrumptious dessert!

You’ll need: A food processor & 4 pudding moulds (approx 200ml each)

Ingredients

175g dried dates
85g self raising flour
150ml maple syrup
175ml water
2 large eggs (separated)
1 tbsp vanilla extract

Optional

  • Use low fat greek yogurt (0% is best) to serve, or a extra dollop of maple syrup is fine!
  • Add some pecans to the individual moulds for a crunchy texture
  • For a treat, serve with vanilla ice cream (you can buy low-fat ice cream!)

Method

1.       Make sure the oven is set to 180C (Gas Mark 4)
2.       Simmer the dates in a pan of 175ml for 5 mins.
3.       Once done, add to a food processor along with 6tsbps of maple syrup & vanilla extract. Blend until smooth.
4.       Place mixture in a bowl & add the egg yolks and flour.  Mix together.
5.       In a separate bowl, whisk the egg whites until stiff & fold in the date mixture.
6.       In each mould put 1 tbsp of maple syrup in, and then add the mixture to each individual mould. Cover each mould tightly with foil.
7.       Stand the moulds in an ovenproof dish, and pour hot water in the dish halfway up the moulds.
8.       Cook for 1 hour – a good way to test it is inserting a skewer in the middle, if it comes back clean there done!
9.       Serve up & enjoy!

    I just copied & pasted this recipe, sounds yummy, my partner likes puddings so this will set his tastebuds on edge. I am a ‘veggie’ so I don’t eat eggs but I have sucessfully used a ‘egg replacement’ powder available from all Health Stores and you would not know the difference. I would say this is a real ‘Winter Warmer’ when you just want to be snuggly by the fire and get cosy and have a nice treat for after your dinner…..very nice. Keep the recipes coming!
