Delicious Easy Recipe Ideas for the First BBQ of the Year

It’s only a matter of time until someone broaches the subject of a barbecue. After all, the days are slowly getting longer and the first signs of spring sunshine always get people in the mood for a spot of al fresco dining.  Why not make the most of the warmer weather and host the first barbecue of the year yourself? To get you into the spirit of things, here are a few delicious and easy recipe ideas to try out.

Delicious Drumsticks

This recipe will really get mouths watering. Prepare a mixture of soy sauce, honey, olive oil, tomato puree and Dijon mustard and coat your chicken drumsticks in it. Leave it to marinate for 30 minutes as you heat the barbecue. Cook them for 35 minutes, ensuring they’re thoroughly heated all the way through, and enjoy their sticky, delicious goodness.

Veggie Skewers

The vegetarians definitely won’t feel left out if you whip up a batch of these veggie skewers. Chop courgette, red and green pepper, butternut squash and tofu into equal sized chunks and toss them in oil, lemon and a splash of balsamic vinegar in a bowl. Slide them onto skewers, alternating between each ingredient, and cook for 10 minutes, turning regularly. For a sweet treat, try adding chunks of apple

Piping Hot Potatoes

The side dishes are just as important as the burgers and sausages, and this one is both tasty and incredibly simple. Parboil mini new potatoes for five minutes and drain. Pour them onto a sheet of tin foil and cover with olive oil, salt and a hint of rosemary. Wrap them up to ensure they’re completely covered and place the foil package on the barbecue for 10 minutes. They should be slightly charred and completely delicious.

Simple Soy Salmon

Salmon is a healthy alternative to the traditional meaty options you find at barbecues. To prepare this dish, start by mixing soy, lemon zest, garlic, pepper, brown sugar, water and vegetable oil in a bowl. Add your salmon to the marinade and leave in the fridge for two hours as you prep your other dishes. Once the barbecue is on the go, place your salmon on the grill and cook for 6-8 minutes.
