We just love cooking with seasonal ingredients – but it seems we’re not the only ones! This fabulous revival of seasonal food (like the generations before us) has really taken off. As wonderful as this is, we’re getting a tad bored of the same asparagus and lamb recipes. We’ve come up with something simple that’s seasonal, with a tasty twist! Respecting the seasons doesn’t mean we can’t experiment a little so let’s forget the mint and give tarragon its turn. For those of you who aren’t familiar tarragon, it has a sweet aniseed taste. It’s commonly used in lamb stews to give a distinctive kick to the stock. We thought we’d go one better and make Tarragon rub to marinade our fillets! The result; outstanding!

This is the easiest yet most impressive chicken you’ll ever serve your guests! It’s a real triumph when you bring it out of the oven. Basically you’re cooking a whole chicken stood on a can of your favourite liquid. Why I hear you ask? Well, when the can is opened the liquid absorbs into the chicken making it superbly moist and tasty.
